I am so excited to share with you my follow-up to my Carrot Cake Trial earlier this summer! After all of the chaos of my wedding the weekend of the Colorado 2013 historical floods, it was nice to have something that went perfectly as planned!
With my Recipe adapted from Wicked Good Kitchens, my decadent 4-layered Paleo Carrot Cake was perfect! No one would guess this was made without butter, grains, or cane sugar, it was truly magical.
I made the cake about a week before my wedding, froze the layers for about an hour then frosted and assembled them before putting it back in the freezer. We took it out of the freezer the morning of the wedding and it thawed out perfectly. I’d have to say with the stress and a very tight dress I only had a little bite, but when we took it out of the freezer again a couple weeks later it incredible (we couldn’t wait a whole year, I’ll just make the cake again;) If you are looking for a cake that freezes well this is it, this is it, the flavors or moisture were never diminished.
